VEGETABLE OMELET

Ingredients (1–2 servings)

Directions
1) Rehydrate the vegetables
In a small bowl, combine NPG Freeze-Dried Vegetable Mix with hot water. Let sit for 3–5 minutes until softened. Drain any excess liquid.
Tip: For extra flavor, rehydrate using warm broth instead of water.
2) Whisk the eggs
Crack eggs into a bowl. Add salt, pepper, and milk/water if using. Whisk until the mixture looks smooth and slightly foamy.
3) Sauté the veggies
Heat butter or oil in a nonstick skillet over medium heat. Add rehydrated veggies and sauté for 1–2 minutes to warm through and release aroma.
4) Cook the omelet
Reduce heat to medium-low. Pour in the eggs and gently swirl the pan. As the edges set, use a spatula to pull cooked egg toward the center, letting uncooked egg flow outward.
When the top is slightly glossy but mostly set (about 2–3 minutes), sprinkle cheese if using.
5) Fold and finish
Fold the omelet in half (or into thirds). Cook for 30–60 seconds more, then slide onto a plate.
