Ingredients (Makes about 2 cups)
Salsa Base
-
4 medium ripe tomatoes, finely diced (about 2 cups)
or 1 (14.5 oz / 410g) can diced tomatoes, drained for a thicker salsa -
1/3 cup white onion, finely minced
-
1 to 2 jalapeños, finely minced (remove seeds for milder heat)
-
1 clove garlic, finely minced (or 1/2 tsp garlic powder)
-
2 tablespoons fresh lime juice (about 1 lime)
-
1/2 teaspoon salt, plus more to taste
-
1/4 teaspoon ground cumin (optional, for a deeper flavor)
-
1 to 2 tablespoons NPG Freeze-Dried Cilantro
(start with 1 tbsp, then add more to taste)
Optional add-ins:
-
1/2 teaspoon sugar (if tomatoes are very tart)
-
Black pepper, to taste
-
A pinch of chili flakes for extra heat

Directions
1) Optional: Rehydrate the cilantro (for extra “fresh herb” vibes)
In a small bowl, mix 1–2 tbsp NPG Freeze-Dried Cilantro with 1 tbsp water. Let sit for 2–3 minutes.
You can also skip this and sprinkle directly into the salsa.
2) Mix the salsa
In a medium bowl, combine tomatoes, onion, jalapeño, garlic, lime juice, salt, and cumin (if using). Stir well.
3) Add the cilantro
Stir in the cilantro (rehydrated or dry). Let the salsa sit for 10 minutes so the flavors meld.
4) Taste and adjust
-
More brightness: add a squeeze of lime
-
More herb flavor: add another 1/2 tbsp cilantro
-
Too spicy: add more diced tomatoes
-
Needs balance: add a pinch of sugar or extra salt
5) Serve
Serve immediately with tortilla chips, tacos, grilled meats, burrito bowls, or as a topping for eggs and rice.
