PUMPKIN SPICE YOGURT BOWL

PUMPKIN SPICE YOGURT BOWL

Turn your everyday yogurt bowl into a warm, bakery-style treat with this Pumpkin Spice Yogurt Bowl. Creamy, lightly sweet, and layered with cozy fall flavor. The secret upgrade? NPG Whole Star Anise Seed, brewed gently to infuse a fragrant, naturally sweet licorice-and-herbal note that makes pumpkin spice taste deeper, smoother, and more aromatic.

Star anise is traditionally used to flavor soups, stews, braises, and iconic spice blends like Chinese 5 Spice and Vietnamese pho. In this recipe, we use it the same way you would use a bay leaf to infuse flavor, then remove it to create a subtle, elegant spiced “tea” that blends beautifully into pumpkin and yogurt.

Ingredients (1–2 servings)

Star Anise Infusion

Yogurt Bowl

  • 1 to 1 1/2 cups plain Greek yogurt (or regular yogurt)

  • 1/3 cup pumpkin puree (100% pure pumpkin)

  • 1/2 teaspoon pumpkin pie spice (or cinnamon)

  • 1 teaspoon vanilla extract (optional)

  • Pinch of salt

Toppings (Choose Your Favorites)

  • Granola or crushed graham crackers

  • Chopped pecans or walnuts

  • Pumpkin seeds (pepitas)

  • Sliced banana or apple

  • A drizzle of honey or maple syrup

Directions

1) Make the star anise infusion

  1. Add water and NPG Whole Star Anise Seed pods to a small saucepan.

  2. Bring to a gentle simmer over medium heat, then reduce heat to low.

  3. Simmer for 4–6 minutes until fragrant.

  4. Remove from heat and let steep for 3 minutes.

  5. Strain out and discard the pods (like bay leaves).

  6. Stir in honey or maple syrup if desired. Let cool slightly.

2) Mix the pumpkin yogurt base

  1. In a bowl, whisk together yogurt, pumpkin puree, pumpkin spice, vanilla, and a pinch of salt.

  2. Add 1–2 tablespoons of the star anise infusion (start small).

  3. Taste and add a little more infusion if you want a stronger aromatic note.

3) Assemble the bowl

  1. Spoon the pumpkin yogurt mixture into a serving bowl.

  2. Add toppings: granola, nuts, seeds, fruit, and anything cozy and crunchy.

  3. Finish with a light drizzle of honey/maple syrup if desired.

Serving Idea

For a café-style finish, sprinkle a pinch of cinnamon on top and add a few crushed nuts for crunch. The star anise infusion gives the bowl a subtle, elegant spice profile that tastes “special” without being overpowering.

Pro Tips

  • Don’t overdo the infusion: star anise is fragrant, small amounts go a long way.

  • Meal prep: make the infusion and store in the fridge for up to 3 days.

  • Extra cozy: warm your pumpkin puree for 10 seconds before mixing to make the bowl feel more comforting.
